Belcour Date Cake
A rich and moist cake with notes of toffee

Ingredients
- 1 cup pitted dates
- 1 ½ cups flour, sifted
- 1 t. baking soda
- ¼ t. salt
- ½ cup butter
- 1 cup sugar
- 1 egg
- 1 t. vanilla
- ½ cup butter, cut in small pieces
- ½ cup brown sugar
- ½ cup chopped walnuts

Method
- Preheat oven to 350 F.
- Prepare an 8 inch cake pan with butter and flour.
- Soak 1 cup of dates in 1 cup of boiled water.
- Whisk the flour, baking soda and salt together. Then use a mixer and cream the butter and sugar until light and fluffy. Add egg and vanilla and mix until incorporated.
- Drain the dates, reserving the water. Blend the dates, adding small amounts of water if necessary. Fold the dates into the batter with the remaining date water.
- Bake the cake for about 25 minutes, or until a knife comes out clean.
- Blend the butter, sugar and walnuts with a fork, until it resembles wet sand. Let the cake cool a bit and then spread the topping over the cake, using the bottom edge of a wet spoon. Return the cake to the oven for about 5 more minutes so that the topping is golden and bubbling.
- After inverting the cake out of the pan, flip it once more so that the topping side is on top.
