Belcour Date Cake

A rich and moist cake with notes of toffee

Ingredients

  • 1 cup pitted dates
  • 1 ½ cups flour, sifted
  • 1 t. baking soda
  • ¼ t. salt
  • ½ cup butter
  • 1 cup sugar
  • 1 egg
  • 1 t. vanilla
  • ½ cup butter, cut in small pieces
  • ½ cup brown sugar
  • ½ cup chopped walnuts

Method

  1. Preheat oven to 350 F.
  2. Prepare an 8 inch cake pan with butter and flour.
  3. Soak 1 cup of dates in 1 cup of boiled water.
  4. Whisk the flour, baking soda and salt together. Then use a mixer and cream the butter and sugar until light and fluffy. Add egg and vanilla and mix until incorporated.
  5. Drain the dates, reserving the water. Blend the dates, adding small amounts of water if necessary. Fold the dates into the batter with the remaining date water.
  6. Bake the cake for about 25 minutes, or until a knife comes out clean.
  7. Blend the butter, sugar and walnuts with a fork, until it resembles wet sand. Let the cake cool a bit and then spread the topping over the cake, using the bottom edge of a wet spoon. Return the cake to the oven for about 5 more minutes so that the topping is golden and bubbling.
  8. After inverting the cake out of the pan, flip it once more so that the topping side is on top.
